Cabbage is a very generous vegetable…You buy one and you’re basically covered for the next 3-4 days on vegetables. Although, throw in a carrot or a lemon in there too.

It is also a survivor, cabbage will stay good for many many days. I usually try to keep cabbage in the fridge or in a cool room, since it stays good longer when kept cold.

My biggest advice when it comes to using up cabbage is to wash, dry, chop, store in the fridge in an airtight container and use it in every meal. That’s basically it.

Ingredients

Egg Roll In A Bowl

  • 2 1/2 cups cabbage, chopped
  • 2/3 cup carrots, grated
  • 8 oz chicken breast (ground or chopped)
  • 1 Tbsp tamari sauce
  • 1 cup cauliflower, chopped
  • 2 Tbsp olive oil
  • 3 Tbsp toasted sesame seeds
  • 3 garlic cloves, minced
  • 2 scallions, chopped
  • Optional: turmeric and crushed red pepper flakes

Instructions

  1. Chop all vegetables and the chicken (if not ground).
  2. In a large pan, heat some olive oil (or coconut oil) at medium-high heat saute the 2 cloves of garlic for 30 seconds, then add the chicken and the cauliflower. Saute everything for 4-5 minutes (until the chicken is almost ready)
  3. Add in the cabbage, carrots and stir in the tamari sauce and the other garlic clove.
