Caramel Corn Puff Recipe

You know what puff corn is, right? That childhood memory of the yellow puffed corn that made an awesome salty snack. Who knew that it could be morphed into the most delicious crack, I mean snack of all time.

This Caramel Puff Corn is a perfect addition to any get together – especially at the holidays. Or even better, what a great gift. It’s also budget-friendly compared to other holiday goodies such as nuts.

Puffed corn can be found in most larger grocery stores, typically in the chip aisle. Around the holidays, it is often found at smaller chain stores such as Aldi too. Or, shop for it here at Amazon.

These two products are completely different. Puffed corn is a baked, corn meal that is put under high pressure during processing. Once the cornmeal comes out of the high pressure, steam is created causing it to immediately “puff.”

Easy Candy Recipe

It is the same story but with a different recipe as we’ve told on here before. This recipe once again comes from a co-worker of Barbara’s. At every pitch-in, everyone demands that she brings this because they all love it so much.

Barbara asked her to share her best ever caramel puffed corn recipe, and she was delighted to pass it on for us to share on here.

The best part of her sharing was when she was walking Barbara through the steps, and she explained how to know when the sugar was exactly right. Her mom taught her, and she passed it on to Barbara. The look on her face as she talked about her mom was priceless.

So what’s the secret for this puffcorn crack recipe?

The caramel sauce is ready when it’s at a “soft ball” stage. This means that if you drop a little drop of the sauce into cool water, it will form a ball as opposed to being stringy.

FAQs

How do they make puffed corn? ›

How are corn puff snacks made? Corn puffs are made using a method called "extrusion." Instead of using whole corn kernels, as with traditional popcorn, corn puffs begin with cornmeal. The cornmeal is mixed with water and extruded, or pushed, through a machine to form the basic shape.

Why is my caramel corn not crunchy? ›

→ The exact cooking temperature isn't critical with this recipe, but ideally you want the sugar mixture to reach between 250°F and 300°F. The longer you cook the syrup, the crunchier it will be. For very crunchy popcorn (my favorite!), stop cooking when you see the first wisps of smoke coming from the sugar mixture.

What happens if you forgot the baking soda in caramel corn? ›

Baking soda is what makes caramel corn chewy with a bit of crunch and gives it the classic brittle texture. The baking soda also helps the mixture to increase in volume which ensures it covers all of the popcorn. It's an essential ingredient and without it you'll likely find the texture of the caramel corn to be off.

What are the ingredients in Puffcorn? ›

Corn Meal (52.6%), Edible Vegetable Oil, Rice Meal, Sugar, Gram Meal, Salt, **Spices & Condiments (Onion Powder, Chilli Powder, Garlic Powder, Black pepper Powder), Milk Solids, Calcium Carbonate, Fructose, Cheese Powder (0.2%), Citric Acid.

Why is my homemade caramel corn grainy? ›

Why is my Caramel Corn Grainy? Grainy caramel (or crystalized caramel) happens when the sugar crystals in the caramel seize up or cling together.

Why did my caramel corn come out chewy? ›

Once the caramel has cooled on your popcorn, the air bubbles inside the caramel create a softer texture. The softer texture means you won't be biting into hard-as-cement caramel. Rather, the caramel is melt-in-your-mouth chewy and only slightly crunchy.

Why is my sugar clumping when making caramel? ›

If it's grainy, don't panic—there's still hope. Identify the Cause: Grainy caramel sauce typically results from sugar crystallization during the cooking process. This can happen if sugar crystals form on the sides of the saucepan or if the sugar syrup is mixed too much while cooking.

Why put egg in caramel popcorn? ›

Even if you want to add candy or sauces, it doesn't require an egg. Still, some say the egg keeps the kernels from sticking together, while others say it's to keep wannabe chefs from adding too many kernels to the pan.

Why is my homemade caramel not hardening? ›

If caramels are too soft, that means the temperature didn't get high enough. Again place the caramel back into a sauce pan with a couple of tablespoons of water and heat to 244°F. If you don't have a candy thermometer, you can test with a cold water test. Details on how to use this method can be found here.

What thickens caramel? ›

Thicken the sauce with cornstarch.

Pour the cornstarch mixture into your pot caramel sauce, and stir constantly. Keep the sauce on low heat until it begins to thicken. Then remove the sauce from the stove and let it cool.

What does adding baking soda to caramel do? ›

Why do caramel recipes often call for baking soda? When you add baking soda to cooking caramel, it foams up rather dramatically. That foam is creating tiny air bubbles, which aerate the caramel and prevent it from becoming too dense.

Why is my caramel popcorn bitter? ›

Overheating the mixture

Follow the recipe carefully, and never melt your caramel on your stove's highest setting—it will cause the caramel to scorch and taste burnt. Once it gets a burnt or bitter flavor, it can't be saved. Luckily, sugar is inexpensive, so you can always start over!

Is puffed corn healthy? ›

Potato chips, crackers, corn puffs

According to Larson, "These snacks are filled with air and loaded with sodium, fat, and calories." "Most of these have virtually no nutrition or fiber in them because they are so highly processed."

Are corn puffs fried or baked? ›

Puffcorn or corn puffs are puffed or extruded corn snacks made with corn meal, which can be baked or fried. Puffcorn belongs in the snack group products made with corn grits, rice, wheat, or other cereals. Puffcorn is often flavoured with cheese, caramel, oil, chili, onion, or garlic powder, and many other spices.

Are corn puffs processed? ›

Puffcorn, much like other puffed products such as cereals and crispbreads are processed by Extrusion cooking through an extruder. This is a thermodynamic process where the dough is passed through a tube and heated under a certain amount of pressure.

Is puff corn better than popcorn? ›
