Crockpot Chuck Roast Pot Roast Recipe

This Crock-Pot Pot Roast Recipe came from my Grandmother. It’s the only recipe that I have of hers and the reason I started MyHeavenlyRecipes.com.

If you are looking for a recipe that comes together in 15 minutes then this Crock-Pot Pot Roast recipe is for you. You simply place all the ingredients in the slow cooker and let it do it’s thing…You come home to a delicious meal that makes the entire house smell delicious! I want to first start out by saying introducing you to my trusty, ugly, old and outdated Crock-Pot. It was something I had found in my Mother in Laws home and took to my house because well….it’s cool!

You see I have a thing for old pieces. Whether it’s antique furniture, old tiles, old baking pans, etc. I think the reason I am drawn to these historic pieces is because they last and they will last for years to come. I HATE buying new furniture. These days it’s not even real wood it’s some mix of cardboard and wood that ends up being flimsy after a few years and refuses to hold up to children, dogs and everything in between.

I have used this trusty old Crock-Pot for the past 12 years and it has NEVER failed me! I would say that has made for a happy relationship 🙂

So while she’s not the prettiest she gets the job done and she’s trust worthy! At the end of the day that’s all that matters. Sure she isn’t the most attractive thing and isn’t presentable, but, neither am I. I think that’s why we work so well together!

Ok. Let’s get you cookin’ this Heavenly Pot Roast Recipe in a Crock Pot!

So usually when I make Pot Roast I’ll buy a huge piece of meat. But, I’ve noticed that prices of meat are just crazy high and I refuse to buy it unless there’s a sale. As I purchase grass fed meats it can get costly {yes I know I need to buy a whole cow!}. I about flipped my sh*t when I saw the price of a roast was $18. Sure it would feed the 5 of us for a few days, but, I just can’t justify spending that much money. After all I like to *try* and keep my weekly grocery budget at around $150.

Ingredients:

  • 2-4 Lbs Chuck Roast or Beef Stew
  • 1 onion, quartered
  • 4-6 carrots, ½″ chunks (or small bag of baby carrots)
  • 4-6 celery, ½″ chunks
  • 1 Packet, Lipton Onion Soup (blue box)
  • 1 Beer (whatever you have on hand)

Substitute: You can use 1-2 C of water and beef broth if you don’t wish to use a beer. The beer really helps to break the meat down and give it it’s unique flavor. If using water you may want to use 2 packets of Lipton Onion Soup.

Instructions

  1. In a large skillet brown the outside of the beef. You want a nice sear.
  2. While roast is getting a nice crust place onion, carrots, celery, soup and beer into the crock pot.
  3. Turn your slow cooker to low. (Don’t forget this step….I have more times than I care to admit!)
  4. Once your meat has finished browning place meat into crock pot. If you are using a roast place the fat side up.
  5. Add enough water so that the meat is submerged.
  6. Cook for 6-8 hours on low.
  7. *You can also let a entire roast cook over night. I actually prefer it that way because the meat is so soft and buttery.
  8. Serve over mashed potatoes and a dinner roll or side salad for a complete meal.

This Pot Roast Recipe is made in the crock pot and can be prepped the night before or the morning of. The results are amazing and a recipe you'll come back to over and over again.

Ingredients

  • Chuck Roast or Stewed Beef
  • 1 onion quarted
  • 4/6 whole carrots sliced in ½" chunks (I will sometimes half baby carrots)
  • 4/6 stalks celery sliced ½" chunks
  • 1 packet Liptop Onion Soup blue box
  • 1 Beer whatever you have on hand, I use Yuengling or Bud Light typically
  • 1-2 C Water

  • Turn your slow cooker to low. (Don't forget this step....I have more times than I care to admit!)
