ingredients

  • 2 cans , mild,original or hot,your choice,drained well
  • 2 cans black-eyed peas, drained and rinsed
  • 2 -3 large green peppers, diced small
  • 2 cups sweet onions, diced small
  • 1 bunch cilantro, finely chopped
  • 1 (8 ounce) bottle kraft zesty Italian dressing
  • your favorite tortilla chips, for dipping

directions

  • Place all ingredients in a large bowl and mix well.
  • Cover and place in refrigerator to marinate for a minimum of 2 hours.
  • It's best made the day before, but my DH has been know to eat a big bowl full right away.

  1. Hi...I am not big on salad dressings you buy...so much salt and preservatives...make your own with olive oil, a vinegar you like and maybe a dash of sugar or stevia and a little salt...check out recipes for vinegarettes..

  1. WOW!This is just YUMMY!I did not think I would like this recipe but,boy was I wrong!!!Wonderful Stuff,I think the cilantro makes it great!!!Just the right amount of heat from the tomatos too.

  2. OUTSTANDING--I do believe this is the best recipe I have ever made. Everyone raves about it. The recipe is certainly easy to make, but does require a lot of vegetable chopping. All my family and guests raved about it. My daughter-in-law likes things extremely hot, so she added red pepper flakes to hers. You might want to consider red or yellow peppers which have far more nutrition and taste better. Green peppers are simply unripe pepppers.

  4. A BIG hit at the Oyster Roast last night! I substituted Rotel tomatoes with Cilantro, as I didn't have any fresh cilantro (don't really like it either). I used Kraft House Italian dressing (more emulsified than Zesty Italian), and added about 1/4 cup crumbled feta cheese. So easy and delicious!

  5. This was great! The blend of flavors are wonderful! My 12 year old son loved it-all those chopped vegetables and he ate it-and loved it! Wow!!!! I did add some crushed red pepper flaked to spice it up-wonderful!

  1. I used Maria’s Sweet Italian Dressing instead of zesty. The slightly sweet flavor balances the spicy of the Rotell tomatoes and green chilies.

  2. Really great for pot-lucks. I substituted olive oil, red wine vinegar, and salt to taste for the Italian dressing. Also I served just after mixing and it was all eaten.

  5. Fantastic! I loved this recipe. I like really spicy food so I added fresh jalapenos and I substituted one of the green peppers for a red pepper! The cliantro gave it such a nice flavor. Thanks Geema!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p><p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
